Paleo Buffalo Chicken Dip
A paleo-friendly buffalo chicken dip perfect for Samhain celebrations. Can't even taste the mayo. It's lit.

- 1.0 1/4 lb chicken tenders or boneless skinless breasts
- 1.0 tbsp olive oil
- 1.0 /2 medium onion chopped
- 2.0 cloves garlic minced
- 1.0 tbsp ghee
- 2.0 /3 cup paleo mayo
- 2.0 /3 cup coconut cream
- 1.0 tbsp brown mustard
- 1.0 tsp garlic powder
- 1.0 tsp onion powder
- 1.0 tsp dried dill
- 1.0 /2 tsp smoked paprika
- 1.0 /3 cup hot sauce
- 1.0 1/2 tbsp fresh lemon juice
- Sea salt and pepper to taste
Instructions
- Preheat oven to 400°F and line a baking sheet with aluminum foil
- Place chicken on baking sheet, drizzle with olive oil and sprinkle with salt and pepper
- Bake for 15-20 mins until cooked through, remove from oven and set aside to cool
- Lower oven temp to 350°F
- Heat a small skillet over medium heat and add the ghee
- Sautée the onions until soft, then add the garlic and cook until just softened
- In a large mixing bowl, whisk together mayo, coconut cream, mustard, garlic powder, onion powder, dill, paprika, hot sauce and lemon juice until smooth
- Shred the chicken breasts and add to mixture along with cooked onions and garlic
- Transfer to a small casserole dish
- Bake at 350°F for 20-25 minutes until edges bubble and dip is heated through
