Paleo Buffalo Chicken Dip

A paleo-friendly buffalo chicken dip perfect for Samhain celebrations. Can't even taste the mayo. It's lit.

Paleo Buffalo Chicken Dip

  • 1.0 1/4 lb chicken tenders or boneless skinless breasts
  • 1.0 tbsp olive oil
  • 1.0 /2 medium onion chopped
  • 2.0 cloves garlic minced
  • 1.0 tbsp ghee
  • 2.0 /3 cup paleo mayo
  • 2.0 /3 cup coconut cream
  • 1.0 tbsp brown mustard
  • 1.0 tsp garlic powder
  • 1.0 tsp onion powder
  • 1.0 tsp dried dill
  • 1.0 /2 tsp smoked paprika
  • 1.0 /3 cup hot sauce
  • 1.0 1/2 tbsp fresh lemon juice
  • Sea salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with aluminum foil
  2. Place chicken on baking sheet, drizzle with olive oil and sprinkle with salt and pepper
  3. Bake for 15-20 mins until cooked through, remove from oven and set aside to cool
  4. Lower oven temp to 350°F
  5. Heat a small skillet over medium heat and add the ghee
  6. Sautée the onions until soft, then add the garlic and cook until just softened
  7. In a large mixing bowl, whisk together mayo, coconut cream, mustard, garlic powder, onion powder, dill, paprika, hot sauce and lemon juice until smooth
  8. Shred the chicken breasts and add to mixture along with cooked onions and garlic
  9. Transfer to a small casserole dish
  10. Bake at 350°F for 20-25 minutes until edges bubble and dip is heated through
